- Instead of yellow mustard, Dijon is a great substitute but you may need to add some yellow coloring to get it balance out
- I use the paprika that I normally garnish with inside the filling to make the orange color. You can add some turmeric if you need more yellow (but I think the yolks and yellow mustard are enough). Alternatively, you can use red and yellow food coloring instead if you prefer!
- Make sure not to mound your filling too high or make it too lumpy, or else your pumpkins won’t look right
- If you don’t have a piping bag, you can use a Ziploc with the corner cut off, or just spoon in the filling and do your best to smooth it!
