Instructions

  • Rub your peeled beets in ½ tsp olive oil each, and a little salt and pepper to taste. Then, wrap them in foil

  • While the beets are roasting, you can add the chickpeas, tahini, garlic, lemon juice, salt, pepper, and cumin to your food processor (not the olive oil yet)

  • Add the beets to the other ingredients once they’re done cooking, and blend on high, drizzling in the olive oil while it’s blending, until the mixture is smooth (I usually use 3 Tbsp olive oil, but you can adjust as needed)

  • You may need to cut your beets in half after roasting before adding them to your food processor. My small food processor struggled with the full ones, but cutting them down did the trick!
